5-ingredient cheesy potato pancakes, crispy in the air fryer. Perfect with poached egg & bacon for breakfast or smoked salmon & crème fraîche for lunch.
Ingredients:
  • 750g sebago (brushed) potatoes, peeled, coarsely grated
  • 1 small onion, coarsely grated
  • 80g (1 cup) coarsely grated cheddar
  • 2 eggs, lightly whisked
  • Greek-style yoghurt or sour cream, to serve
Instructions:
  • Gently press potato and onion in a colander to remove excess liquid, then transfer to a large bowl.
  • Combine sharp cheddar cheese and all-purpose flour. Season with your favorite spices. Mix everything together by tossing gently. Use a spatula to carefully fold in the eggs until fully combined.
  • 1. Spray the air fryer basket lightly with oil. 2. Spoon 1/4 cup of the mixture into the basket, spacing them 2cm apart. Gently shape each into an 8cm circle. Spray the tops with oil. 3. Air fry at 190°C for 10 minutes or until golden brown. 4. Transfer to a wire rack using an egg lifter. Repeat with the remaining potato mixture.
