German-style warm potato salad: a cozy Christmas Eve favorite, paired with sausages, perfect for a festive dinner while the little ones unwrap gifts.
Ingredients:
  • 4.25 pounds waxy potatoes
  • 1 small onion, finely chopped
  • 1 cup hot vegetable broth
  • 5 tablespoons white vinegar
  • 2 tablespoons vegetable oil
  • salt and freshly ground black pepper to taste
  • 1 pinch white sugar, or to taste
  • 1 tablespoon chopped fresh chives
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, about 30-40 minutes. Drain and cool for 5 minutes. Peel the potatoes while warm, slice thinly, and transfer to a large bowl along with the onion.
  • Combine the hot broth with vinegar, oil, salt, and sugar. Drizzle the mixture over the warm potatoes and onion to enhance their flavors. Let it sit for 5 minutes to marinate, then season with salt, pepper, and chopped chives before serving warm.
