Traditional Russian German Runza: Savory cabbage and beef filling wrapped in warm, fluffy bread. Hailed as a favorite in Nebraska and South Dakota.
Ingredients:
  • 3 (1 pound) loaves frozen bread dough, thawed
  • 5 pounds ground beef
  • 0.25 cup water
  • 1 large head cabbage, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • salt and freshly ground black pepper to taste
  • 2 tablespoons butter, melted
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and shape the frozen bread dough loaves into 6 balls each. Let them rest.
  • In a large pot over medium heat, break apart the ground beef until evenly browned. Discard excess grease. Add water, cabbage, onion, and garlic. Cook over medium-low heat until cabbage is tender. Season with salt and pepper, adding more pepper. Drain off any extra liquid and set aside.
  • Roll out the dough balls into 5-inch squares on a lightly floured surface. Fill each square with about 3/4 cup of the cabbage burger in the center. Fold the dough over the filling and pinch to seal it. Arrange the filled dough on a baking sheet with the seam side facing down.
  • Bake in a preheated oven for 15 to 18 minutes until golden brown, then brush with melted butter before serving hot.
