Elevate fish burgers with a fresh crispy cabbage, apple, and dill salad topping, adding sublime flavor to your meal.
Ingredients:
  • 1/2 small wombok (Chinese cabbage), finely shredded
  • 125.00 ml fresh dill
  • 1 Granny Smith apple, cut into matchsticks
  • 10.60 gm fresh lemon juice
  • 65g (1/4 cup) aioli
  • 500g skinless salmon fillet, pin boned
  • 1 French bread stick (baguette), quartered, split lengthways
Instructions:
  • Mix the wombok, onion, and dill in a bowl. In a separate small bowl, toss the apple with lemon juice. Add the aïoli and apple mixture to the cabbage and mix well.
  • In a large non-stick pan over medium heat, warm the oil. Season the salmon with salt and pepper, then cook each side for 5 minutes or until done.
  • Preheat grill on high. Place bread on a baking tray, cut-side up, and lightly oil. Grill for 1-2 minutes until lightly golden.
  • Break the salmon into sizable pieces. Spread the wombok and apple remoulade evenly on the bread bottoms. Place the salmon on top, then finish with the bread tops.
