Ingredients:
  • 4 (about 600g) salmon fillets, skin and bones removed, coarsely chopped
  • 1 tsp finely grated lime rind
  • 40.00 ml coarsely chopped dill
  • 1 avocado, halved, stoned, peeled, finely chopped
  • 2 green onions, trimmed, thinly sliced
  • 1 red chilli, seeded, finely chopped
  • 21.00 gm lime juice
  • 4 bagels, split, toasted
  • Oak lettuce leaves, to serve

Instructions:
  • Combine salmon, lime rind, dill, salt, and pepper in a food processor until coarsely chopped. Shape mixture into four 12cm patties. Chill covered for 30 minutes before cooking. Enjoy!
  • Mix ripe avocado, fresh green onions, spicy chili, and a burst of tangy lime juice together in a petite bowl.
  • In a large frying pan over high heat, sear the salmon patties for 1-2 minutes on each side until they are golden brown and nearly cooked through. Remove from heat.
  • On serving plates, stack a bagel half, lettuce leaves, salmon patty, avocado salsa, mayonnaise, and top with the remaining bagel half. Serve promptly.
