Indulge in a gourmet salmon burger with zesty wasabi mayo.
Ingredients:
  • 4 (about 200g each) skinless salmon fillets, coarsely chopped
  • 4 fresh makrut lime leaves, centre veins removed, finely shredded
  • 2 tsp finely grated fresh ginger
  • 125g (1/2 cup) good-quality whole-egg mayonnaise
  • 2 tsp wasabi paste
  • 2 green shallots, ends trimmed, finely chopped
  • 21.00 gm fresh lime juice
  • Vegetable oil, to grease
  • 1 Lebanese cucumber
  • 4 wholemeal buns, split, toasted
  • 4 butter lettuce leaves, washed, dried
Instructions:
  • In a food processor, finely chop the salmon. Transfer the chopped salmon to a bowl and mix in lime leaves and ginger by hand until combined. Season the mixture with salt and pepper. Shape the salmon mixture into 4 patties measuring 10cm each. Chill the patties in the fridge for 30 minutes.
  • In a bowl, mix together mayonnaise, wasabi, shallot, and lime juice. Season with salt and pepper to taste.
  • Grease a chargrill pan with oil and heat over high heat. Cook the salmon patties for 2 minutes on each side for a medium doneness or until they reach your desired level of doneness.
  • Peel the cucumber into thin ribbons. Place bread-roll bases on plates. Spread half of the mayo on them. Layer lettuce, patties, and cucumber on top. Add a dollop of the remaining mayo and onion. Serve with the remaining bread-roll halves.
