Salmon Burgers with Chive and Lemon Mayonnaise

Delicious Salmon Burgers with Zesty Chive and Lemon Mayo perfect for summer. Pair with a fresh salad or coleslaw to complete the dish.
Ingredients:
  • For the burgers
  • 1 large egg
  • 2 tablespoons Dijon mustard
  • 1 lemon, zested plus 1 tablespoon juice
  • 2 tablespoons capers, chopped if large
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup parsley leaves, packed
  • 1/4 red onion, cut into 1-inch pieces
  • 1 1/4 pound skinless salmon fillet, cut into 1-inch pieces
  • 3/4 cup panko
  • 4 burger buns
  • 2 tablespoons olive oil
  • For the lemon chive mayonnaise
  • 3/4 cup mayonnaise
  • 1 1/2 tablespoons lemon juice
  • 2 tablespoons chives, finely chopped
  • 1 tablespoon drained horseradish
  • 1 teaspoon Dijon mustard
  • Pinch black pepper
  • To serve
  • 4 slices tomato
  • 4 slices red onion
  • 4 leaves lettuce
Instructions:
  • Combine the egg, mustard, lemon zest and juice, capers, salt, and pepper in a medium bowl and whisk until well blended.
  • Finely chop the parsley and onion: Use a food processor to pulse the parsley and onion until finely chopped, about 4 to 5 pulses. Add to the bowl with the egg mixture.
  • In the food processor, pulse the salmon chunks in 3 or 4 short bursts until they are in 1/4-inch size pieces, maintaining a slightly chunky texture. Avoid over-processing. Add the salmon to the bowl with the egg mixture, parsley, and onion.
  • Mix the panko into the salmon mixture until well combined. Shape the mixture into four 4-inch patties that are about 1-inch thick. Place the patties in a single layer on a large plate and refrigerate for 30 minutes.
  • Prepare the chive mayonnaise by mixing mayonnaise, lemon juice, chives, horseradish, mustard, and pepper in a small bowl.
  • For stovetop cooking: Heat oil in a large non-stick skillet over medium heat. Add burgers and cook without moving for 4 minutes until golden brown. Flip and cook for another 3-4 minutes or until the internal temperature reaches 130°F. Remove to a plate. For grilling: Preheat the grill to high heat. Brush oil over the grates using a paper towel. Grill the burgers for 4 minutes on one side until golden brown. Flip and cook for another 3-4 minutes or until the internal temperature reaches 130°F. Remove to a plate.
  • - Toast the buns in a non-stick skillet or on the grill for 30 seconds to a minute, if desired, or use soft buns. - Spread chive mayonnaise on the bottom of 4 hamburger buns. - Top with burgers, tomato, onion, lettuce, and the top bun. - Serve the burgers while still warm.
