Spiced fish patty on Turkish bread with mint yogurt and beetroot. Seafood lovers' dream burger with refreshing flavors.
Ingredients:
  • 30.00 ml Greek-style natural yoghurt
  • 1 tsp chopped fresh mint
  • 1.33 gm fresh lemon juice
  • 110g-piece Turkish bread, split
  • 4.60 gm olive oil
  • Rocket leaves, to serve
  • Lebanese cucumber ribbons, to serve
  • 1 small beetroot bulb, peeled, coarsely grated
  • 1 (about 125g) skinless salmon fillet, pin boned, coarsely chopped
  • 20.00 ml chopped fresh continental parsley
  • 1 shallot, end trimmed, thinly sliced
  • 1 tsp sumac
  • 1.25 gm ground cumin
Instructions:
  • In a food processor, pulse the salmon 6 times until finely chopped. Transfer to a bowl and add parsley, shallot, sumac, cumin, and pepper. Mix everything until well combined.
  • Form the salmon mixture into a 2cm-thick, 8cm-wide patty. Transfer to a plate, cover with plastic wrap, and refrigerate for 30 minutes to chill.
  • In a small bowl, mix together the yogurt, fresh mint, and lemon juice. Season with pepper to taste.
  • Preheat the grill on high. Arrange the bread slices with the cut-side up on a baking tray and toast under the grill for about 2 minutes until golden brown.
  • Heat oil in a small non-stick frying pan on high heat, then sear the patty for 1 1/2 minutes on each side for a perfect medium cook or to your preferred doneness.
  • On a serving plate, layer the bread base with rocket, cucumber, spiced salmon patty, yogurt mixture, and beetroot. Top with the remaining bread and serve right away.
