Eye-catching, delicious, and fast-to-make dish perfect for both weekday dinners and special occasions.
Ingredients:
  • 4 (about 200g each) skinless salmon fillets
  • 5.00 gm ground cumin
  • 2.50 gm paprika
  • 380g (2 cups) couscous
  • 400ml boiling water
  • 75g (1/2 cup) craisins (dried cranberries), coarsely chopped
  • 55g (1/3 cup) pistachio kernels, coarsely chopped
  • 250.00 ml fresh continental parsley leaves
  • 250.00 ml fresh mint leaves, torn
  • 125ml (1/2 cup) fresh orange juice
  • 40.00 ml white wine vinegar
  • 14.40 gm honey
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1.25 gm ground cinnamon
  • 4 small radishes, trimmed, halved, thinly sliced
Instructions:
  • Whisk together the orange juice, vinegar, honey, cumin, coriander, and cinnamon in a bowl. Season with pepper to taste.
  • Preheat your oven to 200°C and prepare a large baking tray with non-stick baking paper. Cut each salmon fillet in half lengthwise. Mix cumin, coriander, and paprika in a small bowl, then rub the spice mixture over the salmon. Arrange the salmon on the tray and bake for 8 minutes for medium doneness, or adjust time to your preference.
  • Place the couscous in a spacious heatproof bowl and gently pour the water over it.
  • Let it sit covered for 5 minutes until the liquid is absorbed, then fluff with a fork. Mix in the craisins, pistachios, and two-thirds of the dressing.
  • Mix the parsley, mint, and radish in a small bowl. Spread the couscous mixture on a serving platter and layer the salmon on top. Drizzle the rest of the dressing over the dish.
