Impress your guests with this gourmet salmon dish featuring orange and parsnips - perfect for your next dinner party!
Ingredients:
  • 500ml (2 cups) orange juice
  • 800g parsnip
  • 90g butter
  • 20.00 ml grated orange rind
  • 80.80 gm cream
  • 2 tsp sumac
  • 20.00 ml plain flour
  • 6 (about 125g each) salmon fillets
  • 18.20 gm light olive oil
  • 125 ml (1/2 cup) white wine
  • 3 oranges, segmented
  • 40.00 ml chopped fresh chives
Instructions:
  • Heat up your oven to 160°C.
  • In a saucepan, simmer the orange juice over high heat for 5-6 minutes until it reduces to about 100ml. Then, set it aside.
  • Boil the parsnips in a large saucepan with salted water until tender, then drain and let them cool. Put them in a food processor with salt, pepper, 75g butter, orange zest, and cream, and blend until smooth. Keep warm as you prepare the salmon.
  • Mix sumac and flour on a non-stick baking paper, season with salt and pepper, then coat the skinless side of salmon fillets with the spice mixture.
  • In a non-stick frying pan over medium-high heat, heat the remaining butter and oil. Cook the seasoned-side of the salmon for 1 minute, then flip and cook the other side for another minute. Transfer the salmon to a baking tray and bake in the oven for 5-6 minutes.
  • Combine the wine with the orange juice and simmer over high heat for 5 minutes until half reduced. Mix in the orange segments briefly. Fold in the chives. Serve a generous portion of parsnip puree on each plate, lay a salmon piece on top, and drizzle with the sauce. Optionally garnish with more chives.
