Korean chicken kimchi burgers

Create quick homemade kimchi for delicious Korean chicken burgers.
Ingredients:
  • 750.00 ml shredded Chinese cabbage
  • 115g sriracha
  • 4 spring onions, chopped
  • 2 long red chillies, thinly sliced
  • 1 garlic clove, crushed
  • 2 tsp grated ginger
  • 60ml rice wine vinegar
  • 18.30 gm fish sauce
  • 15.00 gm caster sugar
  • 500g Chicken Mince
  • 1 carrot, grated
  • 1 Free Range Egg, lightly beaten
  • 25g breadcrumbs
  • 18.20 gm peanut oil
  • 150g mayonnaise
  • 2 lebanese cucumbers, cut into thin ribbons
  • 6 Kaiser Rolls, split, toasted
  • Oven-baked chips, to serve
Instructions:
  • In a bowl, mix together the cabbage, 2 tablespoons of chili sauce, half of the onion, chili, garlic, ginger, vinegar, fish sauce, and sugar. Let it sit for 15 minutes to enhance the flavors.
  • Combine chicken, remaining onion, carrot, egg, breadcrumbs, and seasonings in a bowl. Shape into 6 patties and chill in the fridge for 15 minutes. Heat oil in a large frying pan over medium heat and cook patties for 4 minutes on each side until done.
  • Squeeze out excess liquid from the cabbage kimchi. Mix the remaining chili sauce with mayo in a small bowl. Place roll bases on serving plates, add the mayo mixture, cucumber, chicken patties, kimchi, and bun tops. Serve with chips.
