Spicy Korean kimchi and chicken rotini fusion dish - a quick and easy weeknight meal.
Ingredients:
  • 1 (12 ounce) box whole wheat rotini pasta
  • 2 cups garlic mushroom marinara sauce
  • 1 cup chopped kimchi
  • 0.5 cup shredded cooked chicken
  • 0.5 cup diced white onion
  • 1 tablespoon red chile paste
  • 1 tablespoon butter
  • 1 tablespoon chopped scallion
Instructions:
  • Bring a pot of generously salted water to a rolling boil. Cook the rotini until al dente, about 15 minutes. Drain the pasta and transfer it to a bowl.
  • Simmer marinara sauce in a saucepan, then add kimchi, chicken, onion, and red chile paste. Stir until well combined and heated through, approximately 5 minutes.
  • Incorporate butter into pasta, ensuring every strand is coated. Drizzle marinara sauce generously over the pasta and sprinkle with fresh scallions for a burst of flavor.
