Spicy Korean chicken burritos with kimchi, cilantro, cheese, and salsa for a delicious fusion of flavors.
Ingredients:
  • 6 cloves garlic, minced
  • 2 tablespoons Korean chile paste (gochujang)
  • 1 tablespoon soy sauce
  • 2 teaspoons white sugar
  • 1 teaspoon sesame oil
  • 2 (10 ounce) cans chicken chunks, drained
  • 4 (10 inch) flour tortillas
  • 2 tablespoons vegetable oil
  • 2 teaspoons butter, softened
  • 1 cup fresh cilantro leaves
  • 0.5 cup chopped kimchi, squeezed dry
  • 2 tablespoons shredded sharp Cheddar cheese
  • 1 tablespoon salsa
Instructions:
  • Preheat oven to a toasty 360 degrees F (182 degrees C).
  • Combine garlic, chile paste, soy sauce, sugar, and sesame oil in a bowl, mixing until sugar dissolves. Add chicken and coat evenly.
  • Place tortillas snugly in a shiny aluminum foil pouch and let them heat in the oven until warm and tender, approximately 10 minutes.
  • Warm the tortillas and then heat vegetable oil in a skillet. Cook and stir the chicken in the skillet until it is hot and the sauce has thickened, which should take about 10 minutes.
  • Spread 1/2 teaspoon butter on one side of each warm tortilla, then evenly divide the chicken between them. Top with cilantro, kimchi, Cheddar cheese, and salsa.
  • Fold each side of the tortilla towards the center to partially cover the filling. Roll the tortilla so that the filling is completely surrounded.
