Spicy Kimchi Fried Rice topped with a crispy fried egg is a flavorful and quick dinner using leftover rice and kimchi.
Ingredients:
  • 1 egg
  • 1 tablespoon canola oil
  • 0.25 cup ground beef
  • 1 green onion, sliced, white and green parts separated
  • 1 cup kimchi, drained and chopped
  • 1 tablespoon gochujang (Korean hot pepper paste), or to taste
  • 3 cups cooked short-grain rice
  • 1 teaspoon butter
Instructions:
  • In a large nonstick skillet, heat canola oil over high heat. Add ground beef and white parts of green onion. Reduce heat to medium and cook, stirring, until the meat is browned and the onion is fragrant, about 1 to 2 minutes.
  • Combine kimchi and gochujang into the meat mixture and cook until aromatic and heated through, about 2 to 4 minutes. Stir in rice and continue cooking until the rice is warm and well-coated with gochujang, approximately 3 to 5 minutes.
  • Drizzle the aromatic sesame oil over the rice mixture and stir until well-coated. Top it off with the fresh green parts of the green onion for added color and flavor.
  • In a skillet over medium-high heat, melt 1 teaspoon of butter. Crack an egg into the pan and cook for 3 to 4 minutes until the white is fully set and the yolk is thick. Serve the egg over the fried rice.
