Spicy kimchi fried rice with savory ham and veggies, perfect for using up leftovers. Add Korean chile paste for extra kick.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 drops sesame oil, or to taste
  • 0.25 cup diced onion
  • 0.25 cup shredded carrots
  • 2 scallions, white and light green parts, sliced
  • 0.5 cup cubed, fully cooked ham
  • 0.33333334326744 cup chopped kimchi
  • 1 teaspoon garlic powder
  • 2 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chile paste)
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet or wok over medium-high heat, combine butter and olive oil until warmed. Stir in sesame oil, followed by onion, carrots, and scallions. Sauté until the onion is translucent, approximately 2 minutes. Add cubed ham and kimchi, cooking for an additional minute. Season with garlic powder.
  • Combine the rice and cook until warmed. Drizzle soy sauce and mix in gochujang, stirring until fully combined. Season with salt and pepper to taste.
