Easy homemade kimchi: Crunchy, fermented veggies perfect for adding flavor to sandwiches, salads, and fried rice!
Ingredients:
  • 1 head napa cabbage, shredded and rinsed
  • 1 small radish, cubed
  • coarse salt to taste
  • 1 small white onion
  • 6 cloves garlic, peeled
  • 1 (1 inch) piece fresh ginger
  • 1 tablespoon rice vinegar
  • 0.25 cup water, or as needed
  • 1 ripe persimmon, chopped
  • 1 cucumber, chopped
  • 3 medium green onions, minced
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • In a large colander, combine cabbage and radish. Season generously with salt, toss well, and allow to sit for 1 hour. Sprinkle with more salt, toss again, and leave for another hour. Rinse cabbage well and let it drain.
  • In a blender, blend together onion, garlic, ginger, and rice vinegar until smooth. Pour in water and blend on high until fully incorporated.
  • In a large bowl, combine the drained cabbage with the blended onion mixture, persimmon, cucumber, green onions, and red pepper flakes. Mix thoroughly.
  • Place the kimchi in clean, airtight containers and let it rest in the refrigerator for three days before enjoying.
