Radish water kimchi

Refreshing radish water kimchi, a spicy-free twist on traditional kimchi.
Ingredients:
  • 1 kg daikon radish
  • 2 cloves of garlic
  • 2½ cm piece of ginger
  • 1 fresh green chilli
  • 1 fresh red chilli
  • ½ small white onion
  • 1 tablespoon runny honey
  • 1 spring onion
Instructions:
  • Peel and thinly slice the radish. Crush the garlic cloves, finely chop the ginger, deseed the chillies, and cut the onion into wedges. Halve the spring onions. Place radish in a large resealable container, add two tablespoons of sea salt, mix well, and let sit at room temperature overnight. Rinse and drain the radish. Return to the container with garlic, ginger, chillies, onion, honey, spring onion, and 600 to 700ml water. Stir to combine and leave at room temperature for 2 days, then refrigerate for up to 2 weeks. Use the liquid as a base for chilled noodle broths.
