Creamy potato and radish green soup with a peppery kick, made indulgent with heavy cream.
Ingredients:
  • 2 tablespoons butter
  • 2 medium potatoes, sliced
  • 4 cups raw radish greens
  • 4 cups chicken broth
  • 0.33333334326744 cup heavy cream
  • 5 radishes, sliced
Instructions:
  • In a large saucepan, melt butter over medium heat. Add onion and sauté until tender. Mix in potatoes and radish greens, ensuring they are coated in butter. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 30 minutes.
  • Once the soup mixture has cooled slightly, blend it in a blender until smooth.
  • Combine the soup and heavy cream in the saucepan until warmed through. Garnish with radish slices before serving.
