Turkey: Lean, affordable meat perfect for quick weeknight dinners beyond holidays.
Ingredients:
  • 200g burghul
  • 80ml cherry jam
  • 23.40 gm wholegrain mustard
  • 36.40 gm extra virgin olive oil
  • 4 turkey thigh chops
  • Sea salt & freshly ground black pepper
  • 100g walnut
  • 80g dried cherry
  • 4 radishes, coarsely grated
  • 125.00 ml fresh mint, torn
  • 125.00 ml fresh parsley, torn
  • Juice & finely grated zest of 1 lemon
Instructions:
  • Place burghul in a medium heatproof bowl and cover with 2 cups of boiling water. Let it sit for 30 minutes. Strain through a fine sieve and press out any excess water using a wooden spoon.
  • In a medium bowl, mix jam, mustard, and oil. Add turkey steaks and coat them well. Season with salt and pepper. Grill on a heated grill plate for 2-3 minutes on each side until caramelized and cooked through. Rest the steaks on a plate covered with foil for at least 5 minutes before serving.
  • Combine burghul with walnuts, cherries, radish, mint, parsley, lemon juice, zest, and remaining oil. Season to taste. Serve with steaks.
