Try this refreshing spring salad: radish, peas, and hard-boiled eggs - ideal for picnics or a light lunch.
Ingredients:
  • 2 tablespoons orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon white sugar
  • 1 clove garlic, peeled and crushed
  • salt and freshly ground black pepper to taste
  • 2 cups thinly sliced radishes
  • 0.5 cup frozen petite peas, thawed
  • 0.25 cup thinly sliced red onion
  • 2 hard-cooked eggs, cut into wedges
Instructions:
  • Combine fresh orange juice, zesty lime juice, quality olive oil, fragrant rice vinegar, a touch of sugar, minced garlic, and a pinch of salt and pepper in a bowl, whisking until well blended.
  • In a large bowl, mix together radishes, peas, and red onion. Add dressing and gently toss until evenly coated. For enhanced flavor, chill in the refrigerator for 30 minutes before serving.
