Celebrate spring with a colorful salad bursting with snow peas, zucchini, and radishes, paired with flavorful marinated kebabs.
Ingredients:
  • 2 x 450g Grill Sweet BBQ Chicken Kebab
  • 100g snow peas, trimmed
  • 2 medium zucchini, cut into ribbons
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 lemon, zested and juiced
  • 11.80 gm wholegrain mustard
  • 2 tsp tarragon, chopped
  • Lemon wedges, to serve
Instructions:
  • Preheat the barbecue grill or chargrill to medium heat. Grill the kebabs, turning occasionally, for 10-15 minutes or until they are fully cooked.
  • Place the snow peas in a heatproof bowl and cover them with boiling water. Let them stand for 2 minutes, then drain and rinse under cold water.
  • Place snow peas, zucchini, radish, and lemon zest artistically on plates. Combine lemon juice, oil, mustard, and tarragon in a bowl. Season mixture and drizzle over the salad.
  • Present the kebabs alongside a refreshing salad and lemon wedges.
