Sticky mango chicken skewers recipe

Mango marinade elevates chicken with sweet, sticky flavor. Serve over steamed rice with fresh mint.
Ingredients:
  • 6 Australian Chicken Thigh Fillets, trimmed, cut into 2cm pieces
  • 1 mango, stoned, peeled, finely chopped
  • 1 small avocado, stoned, peeled, finely chopped
  • 2 spring onions, thinly sliced
  • 42.00 gm lime juice
  • 1 long green chilli, seeded, finely chopped (optional)
  • 62.50 ml finely shredded mint
  • 1 mango, stoned, peeled, coarsely chopped
  • 57.20 gm honey
  • 20.00 ml sriracha or chilli sauce (optional)
  • 1 garlic clove, crushed
  • 2 tsp finely grated ginger
  • 1.25 gm ground cumin
  • 62.50 ml finely chopped coriander
Instructions:
  • Blend mango, honey, sriracha or chilli sauce (if using), garlic, ginger, cumin, and coriander in a blender until smooth to make the sticky mango marinade.
  • In a bowl, coat the chicken with the delightful mango marinade, ensuring every piece is well coated. Cover with plastic wrap and chill in the fridge for 1 hour to enhance the flavors.
  • Skewer chicken onto 12 metal or soaked bamboo skewers. Grill on medium heat for 10 minutes, turning occasionally until fully cooked. Place on a plate, cover with foil, and let rest for 5 minutes before serving.
  • In a medium bowl, toss together ripe mango, creamy avocado, fresh spring onions, tangy lime juice, a hint of spicy chilli (if desired), and fragrant mint. Season with salt and pepper to taste.
  • Arrange skewers on individual serving plates and generously spoon mango salsa over the top.
