Elevate your Sunday roast with a quick and flavorful sticky mango pork roast. Ready in less than an hour!
Ingredients:
  • 600g packet frozen roast vegetables
  • 36.40 gm extra virgin olive oil
  • 2 x 300g pork fillets
  • 82.50 gm mango chutney
  • 200g tub plain Greek-style yoghurt
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a baking tray with baking paper and spread the vegetables on the tray. Roast for 20 minutes until golden and tender.
  • Heat oil in a frying pan over medium-high heat until sizzling. Add pork and brown on all sides for about 5 minutes. Remove from heat and toss in 1/4 cup of mango chutney to glaze the pork.
  • Combine pork with vegetables in the oven, then generously drizzle the pork with the flavorful chutney from the pan. Bake for 15 minutes, or until the vegetables are tender and the pork is perfectly cooked.
  • While you wait, transfer the yogurt to a serving bowl and season it with salt and pepper. Swirl in the rest of the chutney. Slice the pork. Serve with vegetables and yogurt, topped with coriander.
