Indulge in succulent sticky ribs with vibrant mango salsa, served alongside fluffy rice and zesty lime.
Ingredients:
  • 1 overripe mango, stoned, peeled, chopped
  • 60ml soy sauce
  • 32.00 gm brown sugar
  • 42.00 gm soy sauce
  • 2 star anise
  • 1 cinnamon stick or quill
  • 1 tsp fennel seeds
  • 800g BBQ Pork Ribs or Pork Spare Ribs
  • 2 mangoes, stoned, peeled, finely chopped
  • 125.00 ml freshly shaved coconut or dried coconut chips
  • 1 long red chilli, seeded, finely chopped (optional)
  • 1 red onion, finely chopped
  • 82.50 ml coarsely chopped coriander
  • 40.00 ml finely shredded mint
  • 42.00 gm lime juice
Instructions:
  • 1. Preheat the oven to 150C. Puree the mango in a food processor until smooth. Combine the mango puree with sweet soy sauce, sugar, soy sauce, star anise, cinnamon, and fennel seeds in a saucepan. Cook over medium-low heat, stirring occasionally, for 5 mins until the sauce boils and slightly thickens. Allow it to cool for 10 mins before using.
  • Prepare the roasting pan by lining it with baking paper. Place the ribs in the pan and pour over half of the mango mixture, ensuring they are fully coated. Cover the pan tightly with foil and roast for 1 1/2 hours, or until the pork is tender and easily falls off the bone.
  • Roast uncovered for 30 minutes, brushing occasionally with the remaining mango sauce, until the pork is caramelized.
  • Prepare the mango and coconut salsa by mixing together mango, coconut, chili (optional), onion, coriander, mint, and lime juice in a bowl. Serve the ribs alongside the salsa.
