Irresistible sticky, smoky pork ribs with sweet mango salsa.
Ingredients:
  • 80ml barbecue sauce
  • 22.20 gm tomato paste
  • 60ml cider vinegar
  • 32.00 gm brown sugar
  • 7.50 gm smoked paprika (pimenton)
  • 3 garlic cloves, finely chopped
  • 1.5kg pork spare ribs
  • 1 mango, chopped
  • 1 red capsicum, chopped
  • 1 bunch coriander, leaves chopped
Instructions:
  • Create the marinade by mixing barbecue sauce, tomato paste, vinegar, sugar, paprika, garlic, and 2 tsp sea salt in a bowl. Toss in the ribs until coated, then cover and refrigerate for at least 2 hours.
  • Preheat the oven to 160C. Drain the ribs, saving the marinade. Arrange the ribs in a large roasting pan, cover with foil, and bake for 1 hour. Uncover, increase the heat to 200C, add 1/4 cup (60ml) water to the pan, and brush the ribs with the reserved marinade.
  • Continue cooking for an additional 50 minutes, deglazing the roasting pan with a wooden spoon and brushing the ribs with the flavorful pan juices every 10-15 minutes.
  • Combine mango, capsicum, and coriander in a bowl, tossing gently to mix.
  • Slice the ribs, baste with any remaining pan juices, and enjoy with flavorful mango salsa.
