Smoky barbecue pork ribs with cabbage & corn slaw

Irresistible smoky BBQ pork spare ribs.
Ingredients:
  • 4.60 gm olive oil
  • 1kg pork spare ribs
  • 141.25 gm barbecue sauce
  • 82.50 ml apple cider vinegar
  • 32.00 gm brown sugar
  • 2 garlic cloves, crushed
  • 2.50 gm smoked paprika
  • Pinch dried chilli flakes
  • 3 sweet corn cobs, husks in tact
  • 1/4 white cabbage, shredded
  • 2 shallots, thinly sliced
  • 125.00 ml chopped fresh coriander
  • 77.55 gm sour cream
  • 42.00 gm fresh lime juice
Instructions:
  • In a large saucepan over medium-high heat, heat the oil until shimmering. Cook the pork in 2 batches for 3-4 minutes per side, or until golden brown.
  • In a small bowl, mix together the sauce, vinegar, sugar, garlic, paprika, chilli, and 1/4 cup water. Pour this mixture into the saucepan along with the pork. Cook covered on very low heat for 1 hour until the pork is tender.
  • Microwave the corn in its husk on high for 10 minutes. Let it cool, then remove husks and kernels with a knife, pressing flat-side down for easy cutting.
  • In a large bowl, mix the corn, cabbage, shallot, and coriander. In a small bowl, combine the sour cream and juice, then add it to the slaw. Season with salt and pepper, toss everything together, and serve the pork ribs with the slaw.
