Create tender, smoky, and sticky ribs by slow baking then finishing on the barbecue with adult supervision for safety.
Ingredients:
  • olive oil
  • 2 racks of higher-welfare pork loin back ribs (about 1.6kg)
  • 1 fresh red chilli optional
  • 1 thumb-sized piece of ginger
  • 2 cloves of garlic
  • 150 ml unsweetened apple juice
  • 100 ml white wine vinegar
  • 2 tablespoons tomato ketchup
  • 1 tablespoon Dijon mustard
  • 30 ml low-salt soy sauce
  • 100 g runny honey
Instructions:
  • 1. Preheat the oven to 200°C/400°F/gas 6. 2. Drizzle oil over the ribs, season with black pepper, and rub to coat. 3. For the marinade, deseed and finely chop the chilli, grate the ginger and garlic. Combine in a pan with apple juice, white wine vinegar, ketchup, mustard, soy sauce, and honey. 4. Whisk ingredients, simmer for 10-15 minutes until sauce thickens. 5. Place ribs in a roasting pan, brush with marinade, cover with foil. 6. Bake for 30 minutes, baste with marinade, bake another 30 minutes. 7. Remove foil, baste again, bake uncovered until meat pulls away from bone easily. 8. Preheat barbecue, grill ribs over medium-low heat for 5-10 minutes. 9. Serve with green salad and new potatoes.
