Buddy’s potato salad

Classic potato salad, a must-have summer side dish for BBQs and picnics. Perfect companion to grilled meats or fish.
Ingredients:
  • 1 kg new potatoes
  • 1 bunch of mixed soft herbs (30g), such as dill, mint, chives, flat-leaf parsley
  • 2 tablespoons Greek-style yoghurt
  • 1 lemon
  • 2 tablespoons extra virgin olive oil
Instructions:
  • Begin by scrubbing the potatoes and halving any larger ones. Boil them in salted water for about 15 minutes until tender. Drain and let them cool slightly. Chop the herbs. In a large mixing bowl, combine yoghurt with lemon juice and olive oil. Mix in the herbs, a pinch of sea salt, and freshly ground black pepper. Toss the potatoes in the dressing until coated, then serve.
