Buddy’s tuna pasta

Effortless family favorite using pantry staples. Make extra sauce for later convenience.
Ingredients:
  • 1 leek
  • ½ a fresh chilli optional
  • 1 clove of garlic
  • 1 x 400 g tin of quality plum tomatoes
  • 1 x 80 g tin of tuna in spring water from sustainable sources
  • 130 g dried spaghetti
  • 2 sprigs of fresh basil
  • Parmesan cheese to serve
Instructions:
  • Cut, wash, and finely slice the white part of the leek. Halve, deseed, and finely chop the chili. Peel and finely chop the garlic. Heat ½ tbsp olive oil in a large non-stick frying pan over medium heat. Add the chopped vegetables and cook for 5 minutes until softened, stirring occasionally. Crush the tomatoes with a wooden spoon and add to the pan. Fill the tomato tin with water, swirl to gather remaining tomato bits, and pour into the pan. Flake in the tuna, add black pepper and a pinch of sea salt. Bring to a boil, then simmer while you cook pasta. Boil pasta in salted water, then drain (reserving a cup of cooking water). Add pasta to the sauce, stirring in reserved water to help the sauce adhere. Divide pasta between bowls, sprinkle basil, and serve with Parmesan cheese.
