Beans are a powerhouse of nutrition, packed with fiber, protein, vitamins, and minerals, making them a delicious and satisfying way to boost your daily intake of nutrients.
Ingredients:
  • 2 medium leeks
  • 2 sticks of celery
  • 2 red peppers
  • 2 cloves of garlic
  • olive oil
  • 2 teaspoons sweet smoked paprika
  • 1 teaspoon ground cumin
  • handful of ripe cherry tomatoes
  • 1 tablespoon brown sauce
  • 500 ml passata
  • 2 x 400 g tins of mixed beans
  • a few sprigs of fresh flat-leaf parsley optional
Instructions:
  • Prepare the leeks, celery, red peppers, and garlic by cleaning, deseeding, and roughly chopping all the vegetables. Heat 1 tablespoon of oil in a large ovenproof casserole pan over medium heat. Cook the leeks, celery, red pepper, and garlic for about 10 minutes until the leeks soften, stirring occasionally. Add the spices and cook for another 2 minutes. Pour in the remaining ingredients, including one tin of beans filled with water. Bring to a boil, then reduce the heat and simmer for 45 minutes. Check the consistency while cooking and adjust with water if needed. Season with salt and pepper to taste, garnish with parsley, and serve on a baked sweet potato, with brown rice, or a green salad.
