Sticky mango prawns

Ingredients:
  • 300 g large raw shell-on king prawns from sustainable sources
  • 6 cloves of garlic
  • 1 teaspoon curry powder
  • 1 heaped tablespoon mango chutney
  • 1 lime
Instructions:
  • Prepare the prawns by removing legs, tails, and shells, but leaving heads for extra flavor. Devein by running a knife along their backs. Heat a non-stick pan over medium heat. Slice garlic thinly, fry in 1 tablespoon of olive oil until crisp, then set aside, keeping the garlicky oil in the pan. Add curry powder to the oil, then add prawns. Cook for 4 minutes until done, stirring regularly. Mix in mango chutney for 30 seconds, adjust seasoning with salt and pepper, then plate. Top with crispy garlic, lime zest, and serve with lime wedges.
