Family-friendly chicken kebabs paired with a crispy, flavorful salad make a satisfying meal.
Ingredients:
  • 4 sweet chilli chicken kebabs
  • Olive oil spray
  • 200g pkt fresh sweet iceberg lettuce
  • 1 continental cucumber, halved, deseeded, diagonally thinly sliced
  • 1 carrot, peeled, cut into matchsticks
  • 1 bunch mint, leaves picked
  • 250.00 ml watercress leaves
  • 4 shallots, finely sliced
  • 2 limes, juiced
  • 2 tsp sesame oil
  • 2.25 gm sugar
  • Salt & freshly ground pepper
  • 4 wholemeal lavash bread, to serve
Instructions:
  • Preheat the grill to medium heat. Lightly coat the chicken kebabs with oil and grill, turning frequently, for about 10 minutes or until they are fully cooked.
  • Mix together the iceberg lettuce, cucumber, carrot, mint, watercress, and shallots.
  • Combine the tangy lime juice, aromatic sesame oil, and sweet sugar, then season with a pinch of salt and pepper. Drizzle over the salad and mix until everything is thoroughly blended.
  • Take the chicken off the kebabs and distribute evenly onto wholemeal lavash with the salad, then roll them up for serving.
