Chargrilled fennel and asparagus salad

Elevate fennel and asparagus salad with tangy mustard vinaigrette.
Ingredients:
  • 2 large fennel, cut into wedges
  • 2 bunches asparagus, 
woody ends trimmed
  • 11.50 gm olive oil
  • 40.00 ml red wine vinegar
  • 11.80 gm Dijon mustard
  • 40.00 ml chives, finely chopped
  • 120g mixed salad leaves
  • 1 bunch radishes, thinly sliced
Instructions:
  • Preheat a barbecue grill or chargrill to medium heat. Brush fennel and asparagus with oil. Grill fennel for 2 minutes on each side until tender, then transfer to a plate. Grill asparagus for 2 minutes until just tender.
  • Combine the vinegar, mustard, chives, and remaining oil in a small bowl and whisk until well blended.
  • Combine the fennel, asparagus, salad leaves, and radish in a large bowl. Drizzle with dressing and mix well.
