Sweet persimmon enhances traditional spicy Korean kimchi with fresh veggies.
Ingredients:
  • 1 head napa cabbage, chopped
  • 0.25 cup salt, divided
  • 1 (1 inch) piece fresh ginger root, peeled and chopped
  • 1 small white onion, peeled and chopped
  • 2 tablespoons water
  • 3 green onions, minced
  • 1 ripe persimmon, chopped
  • 1 cucumber, diced
  • 1 small radish, shredded
  • cayenne pepper to taste
Instructions:
  • Thoroughly rinse the cabbage, then transfer it to a bowl. Generously sprinkle salt over the cabbage and toss to combine. Allow it to sit for 1 hour.
  • Massage additional salt into the cabbage and let it rest for another hour.
  • Prepare the cabbage by washing and draining it. In a blender, combine onion, garlic, ginger, and water. Blend at high speed until smooth.
  • Combine the fresh cabbage, zesty garlic-ginger blend, chopped green onions, sweet persimmon, crisp cucumber, crunchy radish, and a touch of spicy cayenne pepper, stirring until fully combined.
  • Place the mixture into airtight containers and let it chill in the refrigerator for 3 days before enjoying.
