Whip up mouthwatering kimchi quesadillas with cabbage kimchi, avocado, cheddar and jack cheese, parsley, and lime in just 15 minutes in a skillet. Flavor explosion in every bite!
Ingredients:
  • 2 tablespoons butter
  • 1 cup cabbage kimchi , drained and chopped
  • 2 flour tortillas
  • 1 1/2 cup grated Monterey jack and/or cheddar cheese
  • 1/2 avocado, peeled, pitted, sliced
  • A dash of lime juice
  • 1 tablespoon chopped fresh parsley or cilantro
Instructions:
  • In a cast iron (or non-stick) pan over medium-high heat, melt 1 1/2 tablespoons of butter. Add the kimchi in a single layer and cook for 5 to 6 minutes, flipping once halfway through. Remove from the pan.
  • Melt half of the leftover butter in a pan and swirl to coat. Place a tortilla in the pan, flip to coat with butter, and heat until you see bubbles in the center.
  • Sprinkle half of the grated cheese and half of the sautéed kimchi onto one side of the tortilla. Fold the tortilla in half, pressing down gently with a spatula. Cook until the cheese melts and the tortilla is golden brown, about 30 seconds. Flip and brown the other side. Repeat with the second tortilla and remaining cheese and kimchi.
  • Layer slices of creamy avocado over the vibrant kimchi on the open quesadilla. Drizzle with a splash of zesty lime juice and a sprinkle of fragrant parsley or cilantro. Close the quesadilla and fold it over again.
  • Serve the dish in wedges.
