Kimchi and Spam Fried Rice

Kimchi and Spam fried rice: A quick and flavorful family favorite, ready in just 30 minutes.
Ingredients:
  • 1 tablespoon neutral oil, like sunflower or avocado
  • 6 ounces Spam, diced (1/2 a 12-ounce can)
  • 1 small onion, small diced
  • 1 medium carrot, small diced
  • 3 cloves garlic, finely minced
  • 2 teaspoons fresh ginger, peeled and finely minced
  • 1 cup kimchi, drained and chopped
  • 1 cup curly kale, stemmed and chopped
  • 4 green onions, sliced into 1/4-inch slices, white and green parts separated
  • 1/4 cup kimchi juice
  • 3 cups day-old, cold rice
  • 3 tablespoons soy sauce, or to taste
  • 2 teaspoons toasted sesame oil
  • Toasted sesame seeds, to garnish
  • 4 fried eggs (1 per serving), optional
Instructions:
  • Achieving the perfect crisp: In a large, heavy-bottomed skillet or wok over medium-high heat, add oil and Spam. Sauté until edges are crispy, about 3 to 4 minutes. Transfer to a paper towel-lined plate.
  • For cooking the vegetables, start by adding the onion and carrot to the skillet containing the Spam drippings. Sauté over medium-high heat until the onions become translucent and the carrots soften and slightly brown. Next, introduce the garlic and ginger, and sauté until aromatic for about 1 to 2 minutes. Follow by adding the kimchi, kale, and white parts of the green onions, stir-frying until the kimchi and kale begin to caramelize, and the onions turn translucent, which should take about 3 to 4 minutes. Lastly, pour in the kimchi juice and let it simmer until heated through.
  • Combine rice while stirring: Mix in rice and continue to stir thoroughly. Drizzle in soy sauce and sesame oil while stirring. Adjust seasoning with more soy sauce, sesame oil, or kimchi juice to taste. Reduce heat slightly and cook until crispy bits form on the bottom. Add Spam and majority of green onion parts.
