Pork, kimchi and noodle salad bowl recipe

Spicy kimchi enhances quick pork and noodle salad bowl.
Ingredients:
  • 500g pork & veal mince
  • 160g kimchi, finely chopped, plus extra to serve
  • 20.00 ml finely grated fresh ginger
  • 2 tsp gochujang
  • 62.50 ml chopped fresh mint, plus extra leaves to serve
  • 2 x 100g pkt dried sweet potato noodles
  • 2 large carrots, shredded
  • 2 bullhorn red capsicums, thinly sliced
  • 2 Lebanese cucumbers, halved lengthways, sliced
  • 21.00 gm reduced-salt soy sauce
  • 2 tsp sesame oil
  • 1-2 tsp black vinegar
Instructions:
  • In a bowl, mix together the mince, kimchi, ginger, gochujang, and mint until well combined. Season the mixture and shape it into 12 patties.
  • Oil a chargrill pan and heat over medium-high. Sear the patties for 2-3 minutes per side until golden and fully cooked.
  • Prepare the dressing by whisking all ingredients together in a small bowl until well combined.
  • Prepare the noodles according to the package instructions, then drain them. Divide the cooked noodles, patties, carrot, capsicum, and cucumber evenly among the serving bowls. Drizzle with the dressing, sprinkle with extra mint, and serve with extra kimchi on the side.
