Make mouthwatering Korean Kimchi pork pancakes with a spicy kick.
Ingredients:
  • 200g 3 star pork mince
  • 225g plain flour
  • 90g rice flour
  • 2 Free range eggs, lightly whisked
  • 9.20 gm vegetable oil
  • 2.00 carrot, peeled, cut into matchsticks
  • 2 spring onions, cut into matchsticks
  • Sesame seeds, toasted, to sprinkle
  • 1/2 wombok (Chinese cabbage), finely shredded
  • 30g salt
  • 2 spring onions, ends trimmed, thinly sliced diagonally
  • 24.40 gm fish sauce
  • 1 tsp ground chilli
  • 10.00 gm caster sugar
  • 1 garlic clove, crushed
Instructions:
  • Place wombok in a large heatproof bowl, sprinkle with salt, and pour in 2 cups (500ml) boiling water. Let it sit for 2 hours to soak. Drain, rinse under cold water, and drain well before using.
  • In a large bowl, toss together wombok, carrot, spring onion, fish sauce, chili, sugar, and garlic. Refrigerate overnight to enhance the flavors.
  • 1. Preheat a large frying pan over high heat. Add the ground meat. Sauté while using a wooden spoon to break up any clumps, for about 5 minutes or until the meat changes color and is fully cooked. Remove from heat and transfer the meat to a bowl to cool slightly.
  • In a large bowl, mix together plain flour and rice flour. In a small bowl, whisk together the egg and 1 1/2 cups (375ml) water. Combine the egg mixture with the flour mixture and stir well. Fold in the mince and half of the kimchi.
  • In a medium non-stick frying pan over medium heat, heat a small amount of oil. Pour 1/2 cup of batter into the pan and cook until golden brown, about 1-2 minutes. Flip and cook for another 1-2 minutes until cooked through. Transfer to a plate, cover with foil to keep warm, and repeat with the remaining batter to make a total of 8 pancakes.
  • Plate the pancakes, layer with the rest of the kimchi, carrot, and spring onion. Finish with a sprinkle of sesame seeds and serve promptly with extra kimchi on the side.
