Indulge in succulent chilli-glazed pork cutlets paired with zesty apple kimchi for an easy and flavorful weeknight dinner.
Ingredients:
  • 40.00 ml sriracha or chilli sauce
  • 16.00 gm brown sugar
  • 4 (about 150g each) Pork Cutlets
  • 300g jasmine rice
  • 1/2 small wombok (Chinese cabbage), finely shredded
  • 1 carrot, peeled, cut into matchsticks
  • 1 Granny Smith apple, cut into matchsticks
  • 4 radishes, thinly sliced
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1/2 tsp chilli powder
  • 20.00 ml rice wine vinegar
  • 2 teaspooons fish sauce
  • 2 tsp sesame oil
Instructions:
  • Preheat a barbecue grill or chargrill over medium-high heat. Mix sriracha or chili sauce with sugar in a small bowl. Grill pork for 2 minutes, then flip and brush with half the sauce. Continue cooking for another 2 minutes, flip again, and brush with the rest of the sauce. Grill for 1 more minute on each side until pork is cooked and caramelized. Remove pork from the grill and cover with foil. Let it rest for 5 minutes before serving.
  • In a large bowl, mix wombok, carrot, apple, radish, ginger, chilli powder, vinegar, fish sauce, and sesame oil. Give it a good toss and season to taste.
  • Present the pork alongside the zesty apple kimchi and steamed rice.
