Chilli and soy-glazed pork with udon noodles

Delicious 30-minute pork and noodle stir-fry with chili and soy glaze for a speedy weeknight dinner.
Ingredients:
  • 36.40 gm peanut oil
  • 600g Pork Fillet
  • 80ml soy sauce
  • 20.00 gm mirin seasoning
  • 2 tsp grated fresh ginger
  • 2 long red chillies, thinly sliced
  • 440g pkt udon noodles
  • 300g pkt Superfood vegetable stir-fry
  • Sesame seeds, toasted, to serve
  • Sliced spring onion, to serve
Instructions:
  • In a large frying pan over medium-high heat, sizzle the oil. Season the pork and cook until browned, about 6 minutes. Cover and simmer over medium-low heat, turning occasionally, until fully cooked, about 5 minutes more.
  • Mix together the soy sauce, mirin, ginger, and chili in a jug. Pour the mixture into the pan and cook uncovered, turning the pork occasionally, for 4 minutes, or until the sauce thickens and coats the pork.
  • Place the udon noodles in a heatproof bowl and cover with boiling water. Allow to stand for 2 minutes, then use a fork to separate the strands before draining.
  • Place the pork on a plate and set aside, keeping the flavorful glaze in the pan. Cover the pork to retain its warmth.
  • Turn the heat up to medium and stir-fry the vegetables in the pan until just tender. Then, add the noodles and heat through.
  • Slice the pork generously. Distribute the noodle mixture into serving bowls. Top with the sliced pork. Sprinkle with sesame seeds and spring onion before serving.
