Honey and chilli glazed chicken wings with broccolini rice

Sticky honey and spice glazed chicken wings.
Ingredients:
  • 125ml (1/2 cup) honey
  • 21.00 gm soy sauce
  • 1/4 tsp cayenne pepper
  • 12 (about 700g) chicken wings
  • 250g (1 1/4 cups) jasmine rice
  • 1 bunch broccolini, stems removed, florets chopped
  • Salt
Instructions:
  • Preheat the oven to 220°C and line a baking tray with non-stick baking paper. In a large bowl, mix honey, soy sauce, and cayenne pepper. Add chicken and coat evenly. Let it marinate for 5 minutes. Transfer the chicken to the baking tray and bake on the top shelf for 20 minutes, brushing with pan juices occasionally.
  • While the rice is cooking according to package instructions until tender (about 15 minutes), add the broccolini to the pot for the last 2 minutes of cooking. Drain the rice and broccolini thoroughly and return them to the pot. Season with salt before serving. Divide the broccolini rice into serving bowls and garnish with glazed chicken wings.
