Spiced and honey-glazed lean pork served on a bed of fresh greens.
Ingredients:
  • Olive oil spray
  • 4 (about 150g each) pork loin cutlets, French trimmed
  • 5.00 gm McCormick's Lime & Chili seasoning
  • 200g snow peas, topped, halved diagonally
  • 1 bunch asparagus, woody ends trimmed, cut into 4cm lengths diagonally
  • 1 Lebanese cucumber, halved, thinly sliced diagonally
  • 250.00 ml fresh coriander leaves
  • 21.00 gm fresh lime juice
  • 21.00 gm fresh orange juice
  • 20.00 ml rice wine vinegar
  • 14.40 gm honey
Instructions:
  • Season both sides of the pork generously. Heat a non-stick frying pan over medium heat and lightly grease with olive oil spray. Cook the pork for 4-5 minutes per side for medium doneness. Transfer to a plate, cover loosely with foil, and let it rest for 2-3 minutes before serving.
  • Boil the snow peas and asparagus until bright green and tender-crisp, about 1-2 minutes. Refresh in cold water, then drain. Mix the snow peas, cucumber, and coriander in a bowl.
  • In a small bowl, combine lime juice, orange juice, vinegar, and honey. Season with pepper. Divide the pork and salad onto serving dishes and drizzle with the dressing before serving.
