Slow-cooker caramel pork with Asian greens

Prepare this slow-cooked sweet pork ahead for a flavorful dinner.
Ingredients:
  • 1.8kg boneless pork shoulder
  • 40.00 ml plain flour
  • 36.80 gm vegetable oil
  • 2 eschalots, thinly sliced
  • 3cm piece ginger, cut into thin matchsticks
  • 2 garlic cloves, thinly sliced
  • 44.00 gm sweet chilli sauce
  • 191.25 gm salt reduced chicken style liquid stock
  • 42.00 gm lime juice
  • 24.40 gm fish sauce
  • 62.50 ml kecap manis
  • 2 makrut lime leaves, finely shredded
  • Steamed rice, to serve
  • Asian greens, to serve
Instructions:
  • Prepare the pork by removing the netting, cutting off the rind and excess fat, then cutting it into 8 large pieces. Place the pork in a large snap-lock bag along with flour and season generously with pepper. Seal the bag and shake it to evenly coat the pork pieces.
  • In a large frying pan, heat half of the oil until shimmering. Sear the pork in batches for 5 minutes, until beautifully browned. Transfer the pork to the bowl of a slow cooker.
  • In a pan, sauté eschalots, ginger, and garlic in the remaining oil until softened. Transfer to a slow cooker and combine with sweet chili sauce, stock, lime juice, fish sauce, kecap manis, and lime leaves. Cook on low for 6 hours until pork is very tender. Enjoy the aromatic flavors!
  • Take the pork out of the sauce and tear it into big chunks. Plate the pork over rice alongside Asian greens. Drizzle with the sauce.
