Indulgent French toast with apples, pecans, and brown sugar, drizzled with butter and syrup, topped with whipped cream and berries.
Ingredients:
  • 10 cups cubed (3/4-inch) French or challah bread
  • 8 eggs
  • 2 cups (1 pint) half-and-half
  • 1/2 cup milk
  • 1/3 cup packed light brown sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon ground cinnamon
  • 8 tablespoons butter, softened
  • 3 apples, peeled and coarsely chopped (3/4-inch pieces)
  • 1 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup coarsely chopped pecans
  • Powdered Sugar, Maple syrup or salted caramel topping, if desired
Instructions:
  • Preheat the oven to 300°F. Place the bread cubes on a large cookie sheet and bake for 20-30 minutes until they are dry.
  • Prepare the slow cooker by lining it with foil folded into thirds and spraying it with cooking spray.
  • In a large bowl, whisk together the remaining French Toast ingredients. Gently mix in the bread cubes until well coated. Allow it to stand for 15 minutes, folding occasionally.
  • Melt 2 tablespoons of butter in an 8-inch skillet. Cook apples for about 5 minutes, stirring occasionally. In a small bowl, mix the remaining 6 tablespoons of butter with the rest of the Apple-Pecan Filling ingredients until crumbly.
  • Layer half of the bread mixture (about 4 cups) in the slow cooker. Add half of the apples and sprinkle half of the brown sugar mixture. Repeat the layers.
  • Cover and cook on Low heat setting for 2 1/2 to 3 hours, or until the temperature reaches 160°F and the center is set.
  • Gently remove the foil by loosening edges with a table knife. Dust with powdered sugar and serve with syrup.
