Slow Cooker Caramel Apple Butter

Slow-cooked apple butter with caramel for a decadent, creamy spread.
Ingredients:
  • 6 pounds apples - peeled, cored, and cut into small cubes
  • 2 cups brown sugar
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground cloves
  • 2 (11 ounce) packages individually wrapped caramels, unwrapped
Instructions:
  • Place apples, brown sugar, cinnamon, allspice, salt, and cloves in a slow cooker to create a flavorful mixture.
  • Cook on High for 3 to 5 hours until apples are soft enough to mash easily with a fork. Then blend the apple mixture with an immersion blender until smooth.
  • Melt unwrapped caramels in the microwave for about 30 seconds. Transfer to the slow cooker and cook for 1 to 2 hours.
  • Check ten 8-ounce jars for cracks and rusty rings, discarding any damaged ones. Submerge them in simmering water for at least 5 minutes. Clean the new lids and rings in warm soapy water.
  • Fill the hot, sterilized jars with apple butter, leaving 1/4 inch of space at the top. Use a knife or thin spatula to remove any air bubbles inside the jars. Wipe the rims clean with a moist paper towel, then seal with lids and screw-on rings.
  • Fill a large stockpot halfway with water and bring to a boil. Carefully lower jars using a holder, making sure they are 2 inches apart. Pour more boiling water if needed to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • After simmering, let the jars cool for 12 to 24 hours, ensuring they are spaced apart. Then, check each lid by pressing the center with a finger to ensure they're sealed properly. Remove the rings before storing the jars in a cool, dark place.
