Indulgent slow-cooker stuffed apples with caramel, granola, and cream.
Ingredients:
  • 4 large Pink Lady apples
  • 70g granola
  • 4 fresh dates, coarsely chopped
  • 1.25 gm ground cinnamon
  • 60g butter, softened
  • 110g brown sugar
  • 60ml thickened cream
  • Double cream, to serve
Instructions:
  • Core each apple using an apple corer. Then, use a teaspoon to carve out a 2.5cm-wide cavity in the center of each apple. Make a horizontal slit around each apple without cutting all the way through.
  • Mix together granola, dates, cinnamon, and 20g of butter in a small bowl. Fill the apple pockets with the mixture. Add the remaining butter on top of the apples. Sprinkle sugar and drizzle with thickened cream. Pour 2/3 cup (160ml) of water into the slow cooker. Cover and cook on high for 2 hours or until apples are tender.
  • Arrange apples on individual serving plates and drizzle generously with the luscious caramel sauce. Accompany with a dollop of rich double cream.
