Slow-Cooker Stuffed Peppers

Savor flavorful, budget-friendly stuffed peppers, now easily made in a slow cooker! Prep in 20 minutes, then let it cook for 5 hours hassle-free.
Ingredients:
  • 6 large bell peppers
  • 1 lb ground beef (at least 80% lean)
  • 1 cup finely chopped onions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 cloves garlic, finely chopped
  • 1 1/2 cups cooked white rice
  • 1 can (15 oz) Muir Glen™ organic tomato sauce
  • 2 cups shredded cheddar cheese (8 oz)
Instructions:
  • Prepare the 6-quart oval slow cooker by spraying it with cooking spray. Trim the tops off the bell peppers, then remove the ribs and seeds. Set the prepped peppers aside.
  • In a large nonstick skillet over medium-high heat, sauté beef and onions with salt and pepper for 8 to 10 minutes, until beef is fully cooked and onions are soft. Stir in garlic and cook for 15 seconds. Drain any excess fat.
  • Mix rice and 1/2 cup of the tomato sauce into the beef mixture, ensuring it is well combined. Add 1 cup of cheese and stir. Fill peppers with the beef mixture and place them in the slow cooker. Cover the stuffed peppers with the remaining tomato sauce.
  • Cover the dish and let it cook on Low heat for 4 1/2 to 5 1/2 hours until the peppers are soft. Sprinkle the remaining 1 cup of cheese on top of the peppers, cover again, and cook for an additional 3 to 8 minutes until the cheese is melted.
  • Remove peppers from slow cooker using a slotted spoon.
