Delicious kimchi and udon noodle stir-fry with bacon, garlic, and a flavorful sweet-spicy Asian sauce.
Ingredients:
  • 2 (7 ounce) packages fresh udon noodles
  • 1.5 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha sauce
  • 0.5 tablespoon rice vinegar
  • 2 strips bacon, chopped
  • 1.5 cups chopped kimchi
  • 1 clove garlic, minced
  • 1 teaspoon toasted sesame oil
  • 4 scallions, diagonally sliced
Instructions:
  • Bring a large pot of lightly salted water to a boil. Cook udon noodles until tender yet firm, about 3-5 minutes, then drain.
  • Combine the honey, soy sauce, Sriracha, and rice vinegar in a bowl.
  • Fry bacon in a large pan on high heat until fat is rendered (but not crispy yet), about 2 to 3 minutes. Toss in kimchi and garlic; sauté for 1 minute. Pour in honey-soy sauce, udon noodles, and sesame oil; mix thoroughly. Take off the heat and plate the dish. Garnish with scallions.
