Spicy Korean cabbage side dish that's oh-so-addictive.
Ingredients:
  • 1/2 (about 800g) wombok (Chinese cabbage), trimmed, cut into large pieces
  • 250ml (1 cup) water
  • 60g (1/4 cup) rock salt
  • 2 garlic cloves, finely chopped
  • 2 large slices fresh ginger
  • 1/4 tsp dried chilli flakes
  • 1 tsp rice wine vinegar
Instructions:
  • Wash wombok under cold water and let it drain. Mix water and salt in a large bowl, then add the wombok. Cover with plastic wrap and let it soak for 4 hours. Drain, saving the liquid. Transfer the wombok to a bowl.
  • Enhance the wombok by mixing in garlic, ginger, chili, and vinegar. Place the mixture in a 750ml (3-cup) sealable glass jar and pour over the reserved liquid. Allow flavors to develop for 2-3 days before draining and serving.
