Try this delicious and healthy twist on a traditional Korean dish.
Ingredients:
  • 500g lean beef mince
  • 3 garlic cloves, crushed
  • 2 green onions, thinly sliced, plus extra, to serve
  • 57.20 gm honey
  • 63.00 gm salt-reduced soy sauce
  • 40.00 ml rice wine vinegar
  • 300g sweet potato
  • 450g family-size microwave brown rice
  • 400g packet shredded coleslaw (cabbage, carrot, celery)
  • 180g snow peas, thinly sliced
  • 100g snow pea sprouts, trimmed
  • Kimchi, if desired, to serve
  • Sesame seeds, to serve
Instructions:
  • Heat oil in a spacious wok or non-stick pan on medium-high heat. Brown mince for 4 to 5 minutes. Stir in garlic and onions for 1 minute. Mix in honey, soy sauce, and vinegar; cook for 1 to 2 minutes.
  • Microwave the sweet potato on HIGH for 2 minutes or until tender. Prepare the rice following the packet instructions.
  • Distribute the rice evenly among bowls. Layer with coleslaw, snow peas, minced meat mixture, and sweet potato. Serve with kimchi, if preferred, and garnish with sesame seeds and extra green onions.
